If you want to treat yourself or your loved ones to a fine-dining experience, the Culinary Arts students prepare and serve five-course meals at Grossmont College for $40 per person plus a $1.50 processing fee.
Culinary Arts hosts the fine dining series on Thursday nights. In the spring, it is called “Fine Dining”; in the fall, it is referred to as “Banquet Hall.”
“It is a restaurant-quality, multi-course meal,” said Culinary Arts Faculty Josephine “Jojo” Rossi. “We have a fantastic entree that we have been working on. We have a sauce called bordelaise, which takes days to make. And then we sous vide a flat iron steak.”
Rossi explained: “Sous vide is a technique of cooking that tenderizes the cut that isn’t necessarily tender. It goes with some seasonal vegetables. We have artichokes. We have some mushrooms, which are king trumpets on the plate. And then we have a green garlic potato gratin and it all gets topped with an herby salsa verde.”
Tickets, which can be purchased through the website, typically sell out quickly once they become available, so best to buy them as soon as possible.
“Throughout the semester, Culinary Arts provides the school with 12 services of the fine dining series,” Rossi said. “This usually starts about three weeks into the semester and it usually ends two weeks before the semester.”
